[SATLUG] Newbie SouthCentral SATX Intro/Help Request

Hello everyone at SATLUG!
New to Linux, sick and tired of Microsoft.
Here is what hardware I have to work with for Linux.
One Compaq Presario 5050, 256K Memory, 9 GB slow IDE-HD, DVD-ROM, CD-ROM,
Floppy, two NIC's, with SuSe 9.3 Professional installed.
One HP Pavilion a710n, 1 GB Memory, 160 GB Samsung IDE-HD, No Floppy, HP
CD-RW, DVD-ROM, two NIC's, with RHFC3 installed.
One Asus A7N8X-E, 1GB Memory, WD 160GB-HD Internal, Floppy, Internal
Creativelabs 12X PC-DVD, Internal PlexWriter 16/10/40A, two NIC's, External
WD 160 GB HD, External Pioneer 16x16 DVD Writer, WinXP Professional
One Toshiba Laptop dual boot XP Home/RH FC3, 1 NIC wired, 1 54 MB Wireless
NIC
One Netgear WGR614v2 4 port wired, 54 MB Wireless Router
One SMC 7008ABR 8 port wired Router
Roadrunner Broadband Standard Residential.
Here is what I would like to do:
Install djbdns; for Name Server; can't see why I should have to pay DYNDNS,
Zonedit, or NO-IP or anyone else for my registered domains nameserver
service.
Install Qmail and/or PostFix; for Email Server
Setup LAMP Servers
Install/setup a Jabber Server for multiple domains
I am concerned about security, no open relay (mail), virus/firewall security
other threats to system security.
As a newbie to Linux I haven't even been able to figure out how to defrag my
drives, Use RPM, so far been using Up2date instead of Yum with FC3, Need to
setup firewalls, anti-virus etc.
Need someone with patience and time to assist getting me up to speed. I have
VNC and Skype installed, but would prefer one on one assistance. Can't
afford to pay disabled retired vet on fixed income, with an X with deep
pockets. (her pocket; my retirement). Limited transportation availability. I
live in the Harlingdale area (southside, south of SW Military Drive off of
Pleasanton Road.
