have you tried running the  'nvidia-settings' program?  It is part of the nvidia drivers and is similar to the tools used on windows (i.e for setting up TV-out, turning on hardware mouse shadows, etc..).

It creates a .nvidia-settings.rc file that gets used during startup (i think)

Here is my xorg.conf for my Matrox G450. It may help. Xinerama has
different possible set ups, depending on what your card supports.
