Yes.

I have a Garmin ForeTrex 101 with a serial cable.  My laptop doesn't
have a serial port so I have a serial-to-usb adapter.  When I plug it
in Linux recognizes it and I can then use /dev/ttyUSB0 (or something
like that) to view the data.

I use a couple different programs.
gpsdrive - for mapping
gpsman - for downloading track information from the GPS.  (i.e. you
wandered around and want to plot the elevation profile or similar)
