The answer is don't store mail that you want to keep in the Trash
folder.  Move the mail you want to keep out of Trash into some other
named mailbox.  You can have as many as you want (within reason).  Then
when you delete stuff it will show up in Trash until you really delete
it with 'empty trash'

Incidentally there are also settings in the Preferences about actions to
take on delete.  IIRC, one option (the default) is to move the mail to
Trash, another is to delete the mail completely.  So if you insist on
keeping valuable email in Trash the latter may work for you.
